The cultivated variety, Acau\u00e3, is processed using a distinctive natural method called 'Passa Fermented'. This involves letting the cherries ferment naturally directly on the tree branch before they are harvested. This slow drying process on the plant intensifies the sugars and adds a superior aromatic complexity compared to a classic natural process.<\/p>\n<p>The profile is a classic Brazilian one, but with a much richer and more settled texture. The base of the flavor is sweet and creamy, dominated by notes of milk chocolate and almonds. The on-tree fermentation makes its presence felt through a deep hint of raisins, which rounds out the brew and provides a full-bodied, highly comforting aftertaste.<\/p>\n<p>Boasting an extremely balanced profile, we recommend this coffee for both espresso and filter methods. Extracted as an espresso, you get a dense, creamy, and highly sweet shot dominated by chocolate and almonds, which cuts through milk perfectly.
