An outstanding microlot from Santa Mónica Farm, meticulously crafted by Jairo Arcila, is differentiated by a special processing. The berries undergo a 72-hour dry anaerobic fermentation and are infused with the local lulo fruit and wine yeast, enriching its flavour profile. The result, an explosion of flavours. This microlot stands out for the very high intensity of the aromas, especially in the smell, but also in the drink.
The lulo fruit, or naranjilla (translated from Spanish as “little orange”), is sweet and tart, with notes of citrus, pineapple and kiwi.
Jairo’s dedication to coffee goes beyond farming; he is deeply rooted in his family and community. Married to Luz Helena Salazar, with whom he shares two children, Carlos and Felipe Arcila, Jairo has embraced his sons’ expertise, particularly in specialty coffee brewing. Under their guidance, he refined picking, sorting and processing techniques, even venturing into growing exotic varieties such as Pink Bourbon, Java, Papayo and Gesha.
