Arsosala comes again to bring us that intense floral palette we found the year before. It’s true that we generally look for this flavour profile where jasmine and “yellow” flowers meet the fruity area, this time citrus. Arsosala is a processing station established in 2015, currently serving around 1,200 smallholder farmers in Urga Woreda of Guji. Coffee cherries are picked ripe and the pulp removed the same day, then fermented overnight before being washed and dried on raised beds. Typically, it takes 8-15 days to dry boable coffee in the sun and 15-20 days to dry when cloudy skies.
