Chelbesa is recognised as a prime coffee producing area located in the Gedeo area of the Gedeb district. Renowned for its dense semi-forest vegetation, it is an excellent example of the best agro-ecology of coffee growing.
This lot is produced by 495 small-scale farmers who grow cherries in reddish-brown soil that is particularly fertile, rich in iron and high in acidity.
After harvesting, the coffee cherries are placed in the fermentation tanks of the processing station, made of ceramic, thus contributing to the clarity of the processed coffee and accelerating fermentation through the thermal properties of this material. The cherries are sorted using a system of flotation tanks that remove unripe and immature cherries. During the flotation process, the cherries are cleaned with fresh water before being placed on African drying beds, where they stay for 28 to 35 days.
