The Red Bourbon variety is known for its exceptional quality, offering complex and rich flavors with a pronounced but pleasant acidity.
The batch comes from Gitega Hills, a washing station located in the heart of Africa, in the Cyanika sector near the town of Miko. All of the station’s workers come from the local community, which has an important positive role in providing jobs. Gitega Hills employs 150 people, of whom 11 are permanent and the rest seasonal, 90% are women.
The cherries are left to ferment for 18 hours. Once the fermentation process is complete, drying takes about 12-15 days, after which the fruit is stored in special paper until export.
