Certificate training SCA Sensory Foundation

Recommendation: working practice using brewing, cupping methods.

Course duration: 7-8 hours.

At the end of the course, trainees who wish to obtain the SCA certification diploma will take a theoretical test (in the form of an online exam).

Training fee: 900 RON.

SCA certification diploma fee: 500 RON.

During the course we will cover the following:

  • The 5 senses: sight, smell, taste, smell, hearing, touch, and their essential role in coffee flavour perception.
  • 3 sensory testing methods : discriminative, affective and descriptive (identification, description and characteristics).
  • Solution tests for the 5 tastes: sweet, bitter, sour, salty, umami.
  • Solution tests for body, texture and intensity.
  • Flavour tests with Le Nez du Café solutions.
  • Cupping protocol, practice, formulation and attribute analysis: Fragrance / Aroma / Flavour / Aftertaste / Acidity / Sweetness / Mouthfeel.
