Participation requirements: successful completion of the Sensory Foundation module and 3/6 months work experience using brewing methods, cupping, sensory testing.
Course duration: approximately 14 hours (split over 2 days).
Trainees who wish to obtain the SCA certification diploma will take practical tests during the course and a theoretical test (in the form of an online exam) at the end of the course.
Training fee: 2300 RON.
SCA certification diploma fee: 500 RON.
During the course we will cover the following:

Sensory evaluation in the coffee industry: definition, steps, quality control, calibration, protocols.

Grouping sensory tests: discriminative, affective and descriptive.

Flavour tests with Le Nez du Café solutions.

Sensory mouthfeel tests : rough (gritty, chalky, sandy) / oily / smooth (velvety, silky, syrupy) / mouth-drying (astringent) / metallic.

Sensory filter coffee sensory tests : triangular / in-out / difference from control / overall difference tests / attribute difference tests / underdeveloped / overdeveloped / under-extracted / over-extracted

Cupping protocol, practice, formulation and attribute analysis : Perfume / Aroma / Flavour / Flavour / Aftertaste / Acidity / Sweetness / Mouthfeel
