ABOUT PRODUCT

This lot comes from the São Pedro da Canastra farm, located at an altitude of 1,250 meters in the Serra da Canastra region of Brazil. The cultivated variety, Acauã, is processed using a unique natural method called "Passa Fermented." This process involves allowing the cherries to ferment naturally right on the branch of the tree before harvesting. This slow drying on the plant intensifies the sugars and adds a superior aromatic complexity compared to a classic natural process. The profile is classic Brazilian, but with a much richer, grounded texture. The base flavor is sweet and creamy, dominated by notes of milk chocolate and almonds. The tree-fermentation makes its presence felt through a deep note of raisins, which rounds out the cup and gives it a full-bodied, highly comforting aftertaste. With an extremely balanced profile, we recommend this coffee for both espresso and filter. Extracted as an espresso, you get a dense, creamy, and very sweet shot dominated by chocolate and almonds, which pairs perfectly with milk as well. If you choose alternative brew methods, the coffee reveals a clearer cup where the sweetness of the raisins comes through beautifully, while maintaining its velvety body.
