This lot comes from Finca Las Marias and is part of the Café 1959 agricultural project. The variety grown, Geisha, is renowned for its delicate aromatic profile. The coffee is processed using a double wash: the beans go through repeated stages of fermentation in water and washing to remove the mucilage completely. This technique guarantees an exceptionally clean cup, allowing the floral notes inherent to the variety's genetics to express themselves with maximum clarity.
The sensory profile is bright, refined and highly precise. The cup opens with a complex floral bouquet, in which clear notes of jasmine intertwine with lilac aromatics. As the coffee settles, the silky body gives way to a juicy, grounded sweetness of peach, leading to a fresh, elegant, tea-like finish reminiscent of a specialty tea.
Thanks to an omni roast profile, this coffee can be optimally extracted on any type of equipment. With alternative brewing methods, the extraction highlights the floral complexity and exceptional clarity of the cup. Brewed as espresso, the peach sweetness and delicate acidity take center stage, producing a vibrant, clean and intensely aromatic shot.
